Marshmallow Fondant, great tasting and easy to use
Decorating beautiful confections with fondant can be very frustrating and expensive. When I first started decorating cakes I bought my fondant, but it quickly became too expensive. Not to mention the bleh taste. By my third big cake project I decided to make my own. I made about ten batches with all different recipes before finally finding one I liked. This recipe is easy, tastes great and cuts the cost of pre-made fondant considerably, I will certainly never buy my fondant again!
Ingredients
1/4c (4T) Butter, room temp
1 pkg (16oz) mini marshmallows
4T water
1t flavoring, such as vanilla extract
2 lbs powdered sugar
Put the marshmallows into a large microwave safe bowl. Cook for 45 sec.
They will not look melted until you start to stir. Add water and flavoring, stir. If it looks like this put back into the microwave for 20 sec at a time until all the lumps stir out. If you want your fondant to be all one color add it now.
Once completely melted start adding sugar a little bit at a time, 1/2 -1cup. Beat in completely after each addition. Continute adding sugar until you have only 1 cup left.
Feel free to use your hands when it starts to get to stiff to use a spoon.
This is how it will look when all but the last cup of sugar has been incorporated.
Now transfer to a table or counter with the last cup of sugar and start kneading. Rub butter onto your hands as needed. Don't try to use all the butter just enough to keep it from getting too sticky.
Contiue kneeding until it is only a little sticky and looks something like this. It will take anywhere from 5-10min.
Wrap very well with plastic wrap and store in the fridge over night before using.
When you go to use your fondant it will need to be left at room temp and kneaded to make soft again just like any other fondant. This fondant keeps for several months. Enjoy ^_^
